Chablis 1er Cru Beauroy
Together with the Chablis Grand Cru, the Chablis Premier Cru are at the top of the appellations from Chablis. More complex, with a real long ageing potential, richer they are indeed the jewels of the Chablis crown. The Chablis Premier Cru Beauroy (handsome king) from the Domaine Verret follows this hierarchy to the letter by offering a mesmerising aromatic diversity from the first whiff. Some grapefruit, a bit of honeysuckle and some iodine when its young evolve to a jammy candied repertoire of white flesh fruits and spicy tobacco leaves on a mineral base when given the opportunity to age.
On the palate it's all about richness and complexity. trying to understand it or simply giving in to the pleasure of tasting leads to an easy choice. Supported by a beautiful vivacity, which is a good sign for its ageing potential it will on time unveil a smooth nearly creamy richness. Starting with grapefruit and lemony notes when young, your taste buds will detect in a few years a toasted bread side, but also the curvy roundness of a dessert made with poached peaches, butter and spices.
All that richness pushes the limits of both the type of food you will be able to serve and the complexity of the recipes. You can try poultry with morels, salmon with a smooth sorrel dressing or maybe some scallops cooked in their shells with some cream and foie gras, they are perfect matches. You can also go for a white sauce veal stew or a homemade canard à l'orange.
