Born from a selection of grapes with a specific maturity, the Chablis Premier Cru Beauroy l'Ame du Domaine (literaly Soul of the Domain) quickly offers the aromas and savours you would usually only find on wines that had time to age a bit. Rich, round and even powerful it nonetheless keeps in line with the tradition and can't deny its origins.
Even at a young age the nose has hints of ripe fruits such as pears or dried apricots. Some notes of spices like cloves and toasted bread rapidly make their way to your nostrils. With time and a few years the minerality makes some kind of a come back supporting the ripe and dried fruits and the spicy tobacco leaves expressions. On the palate it's like biting into a fruit picked from the tree at its best, it's as if more than ripe it was nearly caramelised. The vivacity still is here and even if this wine is very rich it is always well balanced. With a few years the freshness will not fade away and the fruity savours will be like soaked in butter and vanilla. It's only at that time that you will be able to taste and enjoy a wine of rare elegance comparable to the greatest wines of Chablis and greatest wines of Burgundy.
Splendid on white meats with sauce, this wine can easily accompany the finest dishes. Its fruity, spicy and lively sides for sure can be a perfect match for a sea-salt cooked foie gras, a poularde demi-deuil (poultry with truffles under its skin) or truffle infused scrambled eggs.
