Chardonnay
Geographically and aromatically close to Chablis, a blind tasting will transport you on the climats (plots of land) of the neighbouring valley. Nonetheless even if the grape variety is Chardonnay the Domaine Verret has made a wine from the Terroirs of the Côtes d'Auxerre (vineyards surrounding Auxerre and Saint Bris).
The discreet and complex nose needs to be unveiled. Starting with a mineral undertone delicate flowery and fruity aromas of lily, honeysuckle, acacia, citrus and ripe apple appear. On the palate you will first feel the cutting edge of the citrussy freshness that leads to notes of ripe white flesh fruits. It also easy to discover the beginnings of a kind of unctuosity, a buttery honey side that will intensify with time.
Finess is the word, you can keep this wine for a bit more complex dishes. Salmon rillettes (spread) with pink peppercorns, Tarragon hare pâté or wild thyme roasted rabbit are only a couple of ideas to make your mouth water.
